I am a professional Chef-Instructor and bought this book over 10 years ago. Absolutely love it! I recommend this book to all of you "foodies" out there; equally if you like cooking or just like to eat! Along with "Joy of Cooking" I consider this encyclopedia a MUST HAVE kitchen bible. I recommended it to my students at every cooking lesson. Over the years, I have given several exemplars as precious gifts. A terrific reference, the book is full of clear, concise shopping and cooking tips, charts, how-to's tips and recipes, beautifully illustrated. I refer to it all the time to verify my knowledge or to learn what I need to, when cooking or preparing teaching materials. Who says "you can't teach an old dog new tricks?" We have used this book every few weeks since we purchased it in 1992. It answers a wide variety of preparation, storage, and cooking questions and covers the breadth of American cookery well. I only wish it was still in print.

I bought this book years ago for my spouse, whose background in food & cooking was limited and I didn't want to have to explain everything all the time. Turns out that *I* have used it constantly--for understanding fruit & vegetable purchase, storage, and preparation, for introductions to foods or techniques new to me, for quick recipes for standard items like sauces, for entertainment because the photos are so good and the writing so clear, and so on. I'd recommend it for anyone, anytime, anywhere.

For a young women out on my own, the Complete Guide to Food and Cooking was by my side at all times in the kitchen. It is the dictionary and encyclopedia of the kitchen. Very easy to find items, and it was actually very interesting just to read. It cut down on my phone bill to my Mom considerably. It offers fully illustrated pictures, "A Tip From Our Kitchen" provides some quick reading to get you on your way. There are many great recipes included. Along with the illustrations are charts that allow you to be efficient, which is great if you are already in the middle of cooking. I love this book and suggest it for all of my friends.
