Not one for fads, Betty sensibly bases this 175-recipe cookbook on the Food Guide Pyramid guidelines recommended by the American Heart Association and many other medical and nutrition professional organizations. You learn tips for cutting down on fat and cholesterol, understanding the different kinds of fat, and making smart food choices for heart health. The idea is to reduce fat by making ingredient substitutions and small alterations, but not making drastic changes. The recipes are varied and creative and don't resemble "diet food": Ginger Shrimp Kabobs, Vegetable Potstickers, Stuffed Veal Chops with Cider Sauce, Vegetable and Ham Jambalaya, Curried Chicken and Nectarines, Caribbean Fish Salad, and Thai Shrimp and Rice Noodle Nests. The desserts include Chocolate Swirl Cheesecake with Raspberry Topping (only 20 percent fat!), Blueberry-Lime Torte (about 15 percent fat), and Double Chocolate-Date Cake (about 25 percent fat). Recipes are labeled with symbols indicating "low-calorie," "low-fat," "moderate-fat," "low-cholesterol," and "moderate-cholesterol," so you can choose how far you want to go. Each recipe has a hefty amount of nutritional information: calories, fat, saturated fat, cholesterol, carbohydrate, fiber, protein, vitamins A and C, calcium, iron, and diet exchanges. Betty Crocker does it again! August 21, 2010 Bev Benford This is a great cookbook! It is certainly up to the standards of other cookbooks put out by Betty Crocker. Having the calories, fat, and cholesterol numbers with the recipes just makes it better. The recipes are clear and easy to follow and the color illustrations are mouthwatering. Since my doctor told me I could no longer make (and eat) my home-made ice creams, I have been looking for a good substitute - I think I have found one in this book: Creamy Peach Freeze on page 208. My friends and I always loved the ginger peach ice cream I used to make - this recipe (with the addition of a little ginger) could be our new favorite!

The only reason I did not give this book another star is because I still have to "tweak" each recipe to make it less caloric.
Anything straight from the book tastes wonderful and can be used in any low cal, low fat diet, like Weight Watchers. BUT you can still substitute Splenda, egg beaters, etc. in most of these recipes and make it even healthier.
Our family has eaten from this book so often that many of the recipes are memorized, and you can probably follow the book for a good two months without eating the same thing twice.
This is the only book we cook from, and I've given several copies away to friends and family who enjoyed a meal. It's great.
